    Aubergine Fritters are one of those foods that are really simple but so satisfying. Paired with a mint raita or sweet and spicy tomato chutney, they make a fantastic starter, snack or part of an Indian feast.

    Golden chickpea batter on the outside, soft and creamy inside. These fritters could even convert those who don’t usually like aubergine, but the recipe works with courgette too.

    Ingredients

    1. 1 Cup Gram Flour
    2. 1/4 Cup Rice Flour
    3. 1 tsp Garlic Paste
    4. 1 tsp Ginger Paste
    5. 1/2 tsp Turmeric Powder
    6. 1/2 tsp Red Chilli Powder
    7. Salt to taste
    8. 1/4 Chopped Coriander Leaves
    9. Water as required
    10. 1 Large Aubergine (400g approx.)
    11. Oil for deep frying

    Steps

    1. Cut the aubergine into thin slices and put them in water.
    2. Then in a large bowl, add all the ingredients for the batter. Add water as required and mix into a smooth batter/paste.
    3. Drain the water from the aubergine slices and coat them in salt. Allow to sit for 10-15 minutes until the excess water is drained.
    4. Heat oil for deep frying. Coat each aubergine slice in batter and fry on both sides until golden and crispy.
    5. Drain the excess oil on tissue paper.
